Great cheese starts with great milk. At 5 Spoke Creamery all of our cheeses are hand made in the farmstead tradition (produced on site with a closed herd) from the raw milk of grass-fed cows. Our milk comes from Holstein cows that are free of pesticides and hormones. We milk the cows at 4:00 A.M. and make the cheese at 9:00 A.M.

Why is the milk we start with so great? Because grass-fed cows get to roam, picking and choosing from a variety of grasses, herbs, flowers and weeds. Raw milk from a grass-fed cow has a depth of flavor or terroir that cannot be duplicated.

Terroir, the French word for soil, describes the subtleties of taste that is imparted by a regional soil - the "taste of the place". 5 Spoke Creamery cheeses' superior taste and smooth, creamy texture reflect the climate, vegetation, soil and farm conditions along with our small-batch production techniques.

In addition to outstanding flavor, 5 Spoke Creamery's raw milk cheeses offer numerous health benefits. Our raw milk cheeses, all aged a minimum of 60 days, promote easier digestion and better calcium absorption; contribute to a stronger immune system; aid in combating allergies; are high in conjugated linoleic acid - the most potent cancer fighter and contain a perfect balance of omega-3 and omega-6 fatty acids.

We currently offer Redmond Cheddar, Herbal Jack, Welsh Cheddar, Tumbleweed (a Cantal style cheese), Talcott, a unique cave-aged tomme style cheese and Browning Gold, a two year aged cheddar style cheese.
