It all began when Alan, a food scientist by training specializing in dairy cultures, spent a summer working for Unilever in Holland. It was there that he fell in love with raw milk cheese, a passion he later shared with Barbara.
After successful careers in Specialty Foods (Alan) and Advertising (Barbara), they went all in and bought a dilapidated dairy farm in Goshen, NY and brought it back to life. The barn and milk house were renovated; a below ground European-style aging room was built along with a cheese making room above. It’s here that the magic happens!

Since its founding in 1993, the Orange County Land Trust has worked to preserve water resources, critical habitat, rural and urban farmland, scenic viewsheds, and ecosystems in and around Orange County for the benefit of all who depend on it. They have helped protect nearly 6,000 acres of unique meadows, fertile farmlands, wetlands, forests, and recreational acres through the negotiation of conservation agreements with private landowners, property donations, and the acquisition of private property. The Weston A. Price Foundation, established in 1999, is a nonprofit that focuses on education, research, and activism to restore nutrient-dense whole foods to the human diet. Their goals include promoting accurate nutrition instruction, supporting organic farming, and advocating for clean, certified raw milk access. Additionally, the Foundation conducts research to test nutrient content and traditional preparation methods’ effects on food, and advocates for harnessing modern technology to preserve ancestral traditions and validate them through science and knowledge. The New York State Cheese Council was founded in 2023 as a network of cheese makers, mongers, affineurs, distributors, and importers working in & supporting Artisan cheese making in New York State.
