A rich, round cheese with a moonscape rind and inside the color of autumnal leaves. Harvest Moon has a hint of sweetness and butterscotch notes that become more pronounced with age.

The genesis for Harvest Moon was the 2013 FDA ban on Mimolette. We wanted to make sure that American cheese lovers could still get to enjoy the sweet and slightly tangy taste of arguably the strangest looking ball of cheese.
We sourced the cheese molds from France, and searched for recipes as the jumping off point for our own raw milk, American made Mimolette-style cheese – Harvest Moon.

Harvest Moon is aged in our underground cave at least 9 months; like all great cave ripened cheeses, Harvest Moon’s flavors and textures continue to evolve, making it an interesting cheese to experience at all different life stages.
